WE GOT SO MANY requests for the recipe for the Butterscotch Brownies, we include it here. Thanks to Rebbetzin Debbi Lederman:

DOUBLE-DOUBLE BROWNIES (as found in "The 55 Best Brownies in the World", pp. 64-65)

Chocolate Layer
2 eggs
3/4c all-purpose flour
1c sugar
1/2c chopped walnuts
dash salt
1/4c cocoa powder
1/2c butter or margarine

Beat eggs until foamy. Stir in flour, sugar, walnuts, and salt. Set aside. Place cocoa powder and butter in a saucepan and cook over low heat until butter melts. Stir mixture well. Remove from heat and add to egg mixture and blend well. Spread batter evenly in a greased 9" x 13" pan. Set aside.

Butterscotch Layer
1/2c butter or margarine
1-1/2c brown sugar
2 eggs, beaten
2 tbls vanilla
1-1/2c all-purpose flour
1/4 tsp salt
1/2c chopped walnuts

Preheat oven to 350 degrees. Cream butter with sugar. Add eggs and vanilla, beating until well mixed. Mix in flour, salt, and walnuts. Spoon over Chocolate Layer in small mounds, spreading as evenly as possible. Bake 25 - 30 minutes (in my oven, they were ready sooner) until brownies begin to pull away from side of pan. Remove from oven and let cool.

Rebbetzin Debbi Lederman's RECIPE for  Double Chocolate Mint Cake:

Cake layer:
1 cup all-purpose flour
1 cup sugar
1/2 cup butter or margarine, softened
4 eggs
12 oz. Hershey's syrup* (if using the syrup from the can, use the whole 16 ounce can)

Heat oven to 350. Grease 13 x 9 pan. In large mixer bowl, combine flour, sugar butter, eggs and syrup. Beat until smooth. Pour into prepared pan, bake 25 to 30 minutes or until top springs back when lightly touched. Cool completely in pan.


Mint Cream Center:
2 cups confectioners' sugar
1/2 cup butter or margarine softened
1 tablespoon water
1/2 - 3/4 teaspoon mint extract
3 drops green food color (to get nice color)
In small bowl, combine all ingredients; beat until smooth.

Spread Mint Cream Center on cake; cover and chill.

Chocolate Topping:
6 tablespoons butter or margarine
1 cup semi-sweet chocolate chips

In small saucepan over very low heat, melt margarine and chocolate chips. Remove from heat; stir until smooth. Cool slightly.

Pour Chocolate Topping over chilled dessert. Cover; chill at least 1 hour before serving.

* Hershey's syrup - in the plastic bottles - there is a code printed on the back of the bottle near the bottom. If the code ends with the letter "A", then it's made on dairy equipment. If the code ends with the letter "C", then it's completely parve.
